Easy Broccoli Salad Recipe
In my last recipe post, Healthy Philly Cheesesteaks, I had leftover turkey, onions, and quinoa so I repurposed them with some broccoli, feta cheese, and topped it with a balsamic dressing. Here’s an easy broccoli salad recipe for lunch!
Here’s what you need:
- 1/2 C Quinoa
- 1/2 Package of Ground Turkey
- 1 Package of steamed broccoli florets
- 1 Package of feta cheese, I like to use Atheno’s Reduced Fat Feta Cheese
- 3 Tbsp of Lite Balsamic Dressing, I like Newman’s Own
Here’s what you do:
- Steam the broccoli
- Cook the quinoa, turkey, and caramelize the onions (see previous post)
- In a large bowl, add the steamed broccoli, feta, and turkey mixture
- Top with dressing
- ENJOY!!!
